Families in Zacapa are improving their eating habits with support from the Ministry of Agriculture, Livestock and Food (MAGA). Nutritionists from the Nutrition-Sensitive Agriculture component of the Vice Ministry of Food and Nutritional Security (VISAN) are teaching families how to prepare practical, affordable, and nutritious recipes using local ingredients.

One focus is on incorporating vegetables like Swiss chard, which is grown in home gardens promoted by MAGA. These recipes aim to help families create healthy meals that support children's growth by transforming accessible foods into daily menu options.

Nutritionist Angelina Nájera recently demonstrated to mothers at Rural Development Learning Centers (CADER) how to prepare Protemás and herb patties. This recipe uses locally available, low-cost products to strengthen family nutrition.

Nájera explained: “They are an ideal alternative to substitute or complement animal protein, especially in households seeking more accessible and balanced nutrition.”

The patties provide plant-based protein, fiber, iron, zinc, and vitamins A, C, and K thanks to ingredients such as Swiss chard, tomato, and cilantro. They also contain antioxidants that help strengthen the immune system. The recipe can be adapted with other herbs found in the community like spinach or watercress. It is recommended to serve them with rice, fresh salad, and a natural lemon drink.

By promoting these types of initiatives through VISAN, MAGA aims to strengthen food security in communities by encouraging practical recipes made with ingredients that families can grow themselves at home. This approach supports sustainable improvements in daily diets for both children and adults.
