Ministry promotes nutritious recipe using local ingredients for Guatemalan families

The Ministry of Agriculture, Livestock and Food (MAGA) in Guatemala has introduced a recipe aimed at promoting better nutrition for families, especially children. The dish, Swiss chard patties with chicken liver, is described as both affordable and quick to prepare.

Keily Escobar, a nutritionist involved with the Nutrition-Sensitive Agriculture program in Jalapa, said that "this recipe can be prepared in 25 minutes, which makes it convenient for mothers and fathers who have limited time."

The main ingredients are Swiss chard and chicken liver. According to MAGA, Swiss chard provides fiber, calcium, iron and antioxidants that support digestion and help strengthen the immune system. Chicken liver contributes iron, vitamin A, B12 and folic acid—nutrients important for preventing anemia and supporting nervous system development.

The recipe also includes Incaparina, a supplement made from vegetable proteins along with B vitamins and zinc. These nutrients are essential for growth and muscle recovery.

MAGA notes that the patties’ soft texture and mild flavor may make them more acceptable to children who are selective eaters. “They can be served at lunch or dinner accompanied by rice, fresh salad or a light soup,” said Escobar.

The ministry emphasizes that this meal is adaptable to local ingredients and budgets while helping promote healthy eating habits among children.

Below is the list of ingredients provided by MAGA for ten servings: two eggs; two bunches of cooked Swiss chard; one-and-a-half pounds of chicken liver; one onion; two garlic cloves; salt and pepper; three tablespoons of powdered Incaparina; four tablespoons of vegetable oil.

Preparation involves cleaning all ingredients thoroughly before cooking the Swiss chard with onion and garlic. The chicken liver is then fried separately before being chopped up along with the greens. This mixture is combined with beaten eggs before being shaped into patties coated in Incaparina powder on both sides. The patties are then fried until cooked through. MAGA recommends serving them with natural tomato sauce.

“This delicious and complete option is recommended to add to every meal plate to contribute to the well-being of boys and girls at home,” stated MAGA.
